This BC wild halibut cheek and scallion pancake were paired with a Veercoope Via Latina Alvarinha 2009, as well as a Adega Pegos selected Harvest 2009.

Stirring the Pot with Hubert DMello

Hubert DMello was born in Mumbai, India where he graduated from Hotel Management in 1984. He ran a catering business in Mumbai from 1985 to 1990, when he moved to the US and joined Carnival Cruise Lines as a bartender. He eventually moved to Atlanta and opened an Indian restaurant and then moved the business to Jackson Heights in New York. After a successful run in New York, he moved to Toronto to be with his wife in 1996.

Over the years he travelled to India and learnt new Indian cuisines and cooking techniques.

After few stints in the food industry, he opened his first vegetarian restaurant in Toronto called Udupi Palace in September 2001, and is now in the process of opening a second restaurant on Gerrard Street called Nitya, which should be open by the end of July 2010.

What inspired you to become a chef?

Since the age of 16 in the catering business in India, I fell in love with food and cooking. I always wanted to experiment and learn; the kitchen has been my comfort zone, so to speak.

Why Cyndi Lauper Looks an Awful Lot Like Macy Gray

As a teenager, I was a huge Cyndi Lauper fan. I loved her music, wanted to look like her, and for a year or so in high school, modelled my wardrobe after the outfits from the videos for her album She’s so Unusual.

By the late 80s though, I had moved on to other types of music and didn’t keep up on everything Cyndi. One night in the summer of ’88, when I was living in Kensington Market, we came home fairly late to find that the streets were blocked off for a film set. This was the summer of that bad vampire detective show Forever Night, which seemed to be filming everywhere in Toronto at the time, so we assumed that’s what it was, and went a few blocks out of our way to get home.

In the middle of the night we woke up to the same Cyndi Lauper song playing over and over again. It was a song I didn’t recognize but as it was a hot night my roommate Amanda and I left the door to our little attic balcony open to catch a breeze. Restlessly we fell asleep to the sound of Cyndi singing. The next morning, the whole market was abuzz about the Cyndi Lauper video shoot that had taken place the night before. Yep, Cyndi Lauper has been right there, on my street, and I had missed her.

Market Mondays – Plums

We’re still in the family Prunus as we move from last week’s cherries to this week’s plums. Plums are eaten from Asia to Europe and are well known for their variety and flavour – from the first tart yellow plums to red, black and the purple varieties most popular in Italian cooking. Worldwide there are over 2000 varieties of the fruit with about 100 available in North America.

Plums are a versatile fruit; they can be made into jam or used in desserts, but can also be made into wine, pickled, dried and salted, or dried into prunes (although the black prunes available in stores are from a specific type of plum). They even work well on pizza with cheese and prosciutto in place of the traditional figs.

Considered one of the world’s healthiest foods, plums are high in anti-oxidants, Vitamin A, Vitamin B2, fibre (prunes are a recommended treatment for constipation) and potassium.

Sunday Brunch – La Palette

La Palette is now considered a Kensington Market landmark, serving up classic French food in an adorable little bistro. So fans were rightly pleased when owners Shamez Amlani and Brook Kavanagh announced they’d be taking over the old Taro location to open a second La Palette.

The space is far more open than during the days of Taro – gone are the heavy booths; wooden tables are draped with pretty fabric and the exposed brick walls are covered in French posters and prints. The back skylight makes up for the lack of a patio, as the room is filled with sunlight.

Our server is friendly and patient, particularly given that I’m visibly upset since I’ve just had a run in with a man on the streetcar who was convinced that everyone attending the Pride parade was going to hell. (No… really. And no, despite my better judgment, I didn’t clock the guy.) Coffee and glasses of water arrive swiftly, and we’re able to settle down and peruse the menu.

There’s Good Eating at Afrofest

When people ask me what my favourite food event of the year is, I always answer without hesitation. It’s not the big trade shows with free samples, or the swank events with lots of “celebrity” chefs. No, my favourite food event of the year isn’t actually a food event at all; it’s a music and culture festival that just happens to have awesome food.

Afrofest has been an annual event since 1990. Taking over Queen’s Park for a weekend every July, the festival features bands and performances from musical groups and dance troupes from Africa and the Caribbean. There’s also a large marketplace area selling crafts, books and art.

And then there’s the food section.

Goodbye Mimi

It is with sad hearts that we pass on the following obituary…

BRAIDBERG, Miriam (Mimi) April 1956 to July 2010. Suddenly at home on Sunday, July 4th.
Dear daughter of Pearl and the late David. Beloved sister and sister-in-law of Ann and Gary Posen, and Shelly and Gerry Merovitz. Wonderful aunt to Sara and Russell Posen Johnston, and Leslie and Daryl Parat. Former colourful proprietor of Mimi’s Restaurant and recognized as Toronto’s Blintz Queen. A graveside service will be held at Holy Blossom Memorial Park, 40 Brimley Road (south of Eglinton) at 1pm. Shiva, 3600 Yonge Street, Suite 424 on Thursday evening only.

Torontonians who frequented Mimi’s will understand what an important contribution she made to our city’s food scene.

Thanks for the blintzes, Mimi – you will be missed.

The All Ontario All the Time Cooking School

Never let it be said that Toronto does not have its fair share of cooking classes. Any night of the week, the culinarily curious can bake, sauté, flambé or roast at courses that range from “watch and eat” style to professional certifications. But for anyone with an interest in local, sustainable cuisine, they should stop looking at options once they hit Culinarium’s Lovin’ Livin’ Local Cooking School.

For those not in the know, Culinarium (705 Mount Pleasant Road)  is a delightful little food shop where all the products are from Ontario. They carry everything from produce and meat to artisanal cheese, Ontario-grown peanuts, jams and preserves, herbal teas and more. Owner Kathleen Mackintosh has curated a wonderfully comprehensive selection of Ontario grown and produced goods and the shop even offers CSAs and meat share programs.

The space itself is designed to look like a country kitchen with shelves full of goodies and a food prep area in the back where small groups can get hands-on experience cooking up local food under the guidance of chefs and experts. With a little bit of rearranging, the shop transforms into space for a class of 8 to 12 people, or a tasting event for up to 16. Culinarium can also accommodate a private tasting – taking over the whole shop – for up to 24 people.

Stirring the Pot with Chef Paul Pisa

Paul Pisa is a homegrown Toronto chef, trained under chefs Mark McEwan and Keith Froggett. In the mid-1990s, Pisa was executive chef of Ellipsis, the popular though now-defunct modern Italian brunch and dinner spot on College Street. When Ellipsis closed, Pisa moved across the street to helm the large and busy Brasserie Aix, serving authentic French-style food.

In 2002, Pisa first joined the team of Toronto hospitality specialists, the Quinn family, who were longtime friends from Scaramouche (1 Benvenuto Place) days. At P.J. O’Brien (39 Colborne Street), Pisa was awarded Best Pub Fare in Canada by the National Post, and built a popular following serving high-quality gastro-pub fare.

In 2005, Pisa left Toronto and launched his own restaurant in the countryside north of Kingston, Ontario. While the business was successful, the partnership was not, and ultimately Pisa returned to the city – and to Quinn hospitality – as Executive Chef of Quinn’s Steakhouse and Irish Bar (96 Richmond Street West), located in the Sheraton Centre hotel at Bay and Richmond.

What inspired you to become a chef?

When I was young I studied music. Then one day I ate a meal prepared by the late Chef Raphaelo Ferrari that showed me the music in food, and I was inspired.

Market Mondays – Cherries

Most years, we’re savouring the first cherries right around now, as they normally ripen locally by the end of June. But if you’ve been frequenting the farmers’ markets, you’ve been eating cherries for weeks, since the sweet cherries, like most other seasonal produce, have come a full two weeks early.

The cherry is the fleshy stone fruit of the Prunus plant and comes in a range of sweet and sour varieties. There are over 1000 varieties of cherry but only about 10% of those are grown on a commercial scale. Most common are the sweet Bing, the sour Montmorency and the yellow-fleshed Rainier, although some Ontario farmers grow many more. If farmers’ don’t have their cherries labelled by variety at market, ask, because there are actually many varieties that are better tasting than those bland Bings.

The history of the cherry dates back to prehistoric times, and was introduced to England by Henry VIII. In North America, while wild cherries were native to the continent, the more traditional varieties we know were brought by French and English explorers and settlers. Prime cherry-growing regions include Southern Ontario, Michigan and British Columbia.
